A Healthier Pot To Cook In

Explaining to my guests why I cook in glass pots only is more difficult that you might think. People are very attached to their pans... especially aluminum. My holistic MD has for years advised against using aluminum cookware.

Dr. Maoshing Ni agrees with my doctor. In a recent article on Toxins In the Kitchen, he explains that aluminum and copper cookware " interact with heat and food, and leach into your diet; gradually these will accumulate in your body, sometimes reaching the point of toxicity. "

What can toxic levels of aluminum do? According to Dr. Ni they have been linked to Alzheimer's disease, brain disorders as well as memory loss, headaches and indigestion.

As for copper, high levels of copper can debilitate the immune system and enable cancer cells to proliferate.

So, use glass, or porcelain enamel coating, cast iron or lead-free terra-cotta clay.
