Is Sauerkraut A Polish Health Secret?
Yes, according to a study conducted jointly by Michigan State Univ. and the National Food and Nutrition Institute of Warsaw. It seems that when Polish women immigrate to the U.S. their rate of breast cancer triples.
However women who continue to eat 3 servings per week of either sauerkraut or raw cabbage don't have that same rate of cancer, even when they come to the U.S. The traditional Polish meals are protecting the women from breast cancer.
What's in sauerkraut that is so healthy? A compound called glucosinolate, which is also found in broccoli, Brussels sprouts, kale, collard greens and cauliflower. It's a cancer-fighting compound.
